The chocolate pudding cake from How It All Vegan is one of my all time favorite cake recipes. It’s a magical recipe. While you’re making it, it seems like there’s no way it’s going to work. You make a cake batter, dump tons of sugar and cocoa powder on it, and drown it in boiling water, but when you pull it out of the oven, you get a rich gooey dessert that’s half cake/half pudding and 100% awesome. This year I made it for a Thanksgiving potluck and topped it with a jar of brandied cranberries a friend gave me. It’s not much to look at, but it was a huge hit at the potluck!
