i have good intentions...

But when I get super busy and/or stressed, my lunch and dinner ends up looking like this:

That's white pasta with Earth Balance margarine, salt, pepper, and soy cheese. Strangely comforting, but not very healthy or energizing. What do you make for lunch that's quick, easy, and cheap?

  1. Actually, I make a meal really similar to that. Pasta (often orzo) with rotel and garlic sauteed in olive oil.
